This recipe was a household favorite when we were growing up. Just like other kids spinach wasn’t usually something we begged for but we all LOVED this spinach recipe. Now that I am cooking it I realize why my dad was so quick to agree to make spinach stuff whenever we requested….it is super easy! The whole family loves this one (unfortunately we just found out Mr Rockstar is allergic to spinach !?! Maybe I need to try this with Kale? sometime).
When we had this the other night we used Trader Joe’s Organic Brown Rice Penne Pasta. We were shocked it just tasted like regular pasta! What a great product. The only ingredients are brown rice and water.
- 1 bunch of spinach (approx 8 oz)
- 1.5 lbs chicken breast, cubed
- 1/4 cup flour
- 2 T butter
- 1 cup cheddar cheese shredded
Put cubed chicken and a bag of spinach in a pot of boiling water. Make a roux of flour and butter in a skillet. Once it is bubbly and starting to brown add any cheese into the roux and cook for a minute. Then spoon out chicken and spinach using a slotted spoon. Add some of the spinach water to get desired consistency of sauce. Finally cook noodles in spinach/chicken water. Serve chicken spinach sauce over noodles and enjoy! I served this with whole wheat Overnight Rustic Bread.
