  • Stuffed Peppers
  • Pan Fried Potatoes (This is a nice video on how to.  I just used sunflower oil, salt, and pepper)
  • Salad

Dessert:

  • Breakfast Oatmeal Cookies

The kids have been eating a lot of “cookies” lately so today I gave them the simple choice of oatmeal or puffed millet cereal for breakfast.  They actually happily chose between those two options.  If you have never tried cooking oatmeal using half milk half water and then adding a ripe mashed banana for sweetness then you won’t believe how good it is!

Now that I have a few recipes that I know work (and some that were flops) it was time to do some more menu planning and get some groceries.  I was nervous that the kids would go crazy in the grocery store when they saw the cookies, yogurt, etc.  Surprisingly they didn’t fuss at all.  Miss Tomboy saw some cookies but when I told her they weren’t “healthy” food she put them back.

Some snacks and treats we picked up at Trader Joe’s:

Plantain Chips, Freeze Dried Mango, Cashews, Hazelnuts, Fruit Bars

In just a few short days my kids have switched from thinking Little Debbie cakes were treats to freeze dried mango and hazelnuts are a real treat.  Crazy!  The hazelnuts are great for satisfying a chocolate craving.

I also found some Oat Milk at my local grocery store.  I was impressed with the protein content and since my kids haven’t really taken to rice milk I thought it was worth a try.   After giving them all a small glass I realized it was not gluten free.  Mommy fail 🙁  Oh well I will just save it for us to have in a couple weeks when testing gluten.  Later I let them taste a few bites of what I thought was a gluten free cereal but it wasn’t.  So double whammy today on the gluten.  Thankfully it was only a small amount in both cases.  Hopefully it won’t throw off our elimination diet.

Dinner turned out great.  Mr Rockstar and Miss Tomboy loved the pan fried potatoes and took some bites of the stuffed pepper filling.  Miss Princess finally broke down and tried one bite of pan fried potatoes.

I did make some more breakfast oatmeal cookies.  They are a great source of protein since each mini cookie is about 1g protein.  They are nice to have on hand so at least once a day I know the kids are really filling up.  Tonight they had to earn their cookie by tasting dinner.

Behaviorally today was the roughest since Day 1 in part because Mr Rockstar woke up at 5:30AM and everybody seems to be starting with a cold.  After breakfast Mr Rockstar decided to take my camera without asking and Miss Tomboy decided she wanted a turn using it.  When asked to return the camera Mr Rockstar point blank refused and when asked to take a time-out he started getting destructive and knocked a picture off the wall and it broke.  He finally took his time out, “paid” with a toy for the broken frame and settled down.  The rest of the day had its good times and hard times but nothing too bad.
