Tacos on Gluten Free Tortillas

Ingredients:

  • Fry Bread Tortillas
  • 1/2 cup quinoa
  • 1 can refried black beans (leave out if in stage 1)
  • 1 lb ground beef
  • 1 tsp salt
  • 1 tsp ancho chili powder (or one fresh chili pepper)
  • 2 tsp dried minced onion
  • 1/2 tsp garlic powder
  • 1/4 cup onion diced
  • 1/4 cup cilantro diced
  • 1 large tomato diced

Instructions:

  1. Make some tortillas using the fry bread recipe.  I made mine fairly small since that was easier for the kids to handle and easier for me to make!
  2. Make some quinoa following package directions
  3. Brown ground beef and add spices
  4. Heat up some refried black beans
  5. Combine and enjoy!  Serve topped with diced tomato, onion, and cilantro
